Process control is a statistics and engineering discipline that deals with architectures, mechanisms and algorithms for maintaining the output of a specific process within a desired range.

Process control is

[t]he activities involved in monitoring and controlling production and manufacturing processes.[1]
[d]escriptive of systems in which computers or intelligent electronic devices are used for automatic regulation of operations or processes. Typical are operations wherein the control is applied continuously and adjustments to regulate the operation are directed by the computer or device to keep the value of a controlled variable constant.[2]
